Peptide bond

The chemical link joining one amino acid to the next. A chain of amino acids connected by peptide bonds is what makes a peptide.

A peptide bond forms when the carboxyl group of one amino acid reacts with the amino group of the next, releasing a molecule of water. Because these bonds can be broken by heat, extreme pH, or enzymes in the digestive tract, peptides are kept freeze-dried until use and reconstituted only when needed. This fragility is also why most peptides are injected rather than swallowed.
